His journey then led him to the mentorship of the legendary Albert Adrià of the iconic elBulli in Roses, Spain. A transformative experience that instilled in him a profound appreciation for both traditional and avant-garde Spanish cuisine.

Driven by a passion for culinary exploration, Sergio later ventured to Kyoto, Japan, where he immersed himself in the art of Kaiseki—a refined dining experience that harmonises with the rhythms of the seasons. This experience not only enriched his culinary repertoire but also deepened his artistic approach to food presentation.

With a robust foundation in diverse culinary traditions, Sergio seamlessly transitioned into the role of a private chef, quickly establishing himself as the preferred choice for Hollywood actors, elite athletes, royalty, and politicians. His deep-rooted advocacy for the healthy Mediterranean diet, shaped by his Spanish upbringing, became a hallmark of his cooking. As he worked closely with athletes and actors undergoing significant body transformations for specific roles, Sergio integrated nutritional science into his culinary expertise. A standout example of this was his collaboration with Chris Hemsworth, where he played a crucial role in optimising Hemsworth’s nutrition to enhance his training for the iconic role of Thor.

Sergio also contributed significantly to the success of the training app CENTR, where he wrote recipes, developed diet programs, and crafted meditations, offering subscribers a comprehensive approach to wellness.

Born to a Spanish mother and a Mexican father in Zaragoza, Spain, Sergio has cultivated a rich, multicultural perspective on food and culture. His culinary artistry extends beyond the kitchen, where he creates stunning visuals for food books, magazines, and film productions. Currently, he serves as the brand ambassador for Winning Appliances, collaborating with John Winning’s team on various culinary and creative ventures, including the recent opening of ORA Japanese Dining and Bar in Sydney’s Waterloo.
